My Dinner 01.7.12 -Pesto and Lemon Mackerel with Couscous and Beans


I wanted to try out some of the skills I had learnt at River Cottage, one of them was to de-done a fillet of Mackerel. I was at Castlepoint today picking up some prints and decided to go to Sainsburys to look for something for dinner. I was going to buy a chicken and have it over a few days but I saw a sign for the fish mongers and decided to have a look! And there it was! The last mackerel fillet! So I bought it, took it home and cooked it but instead of a Salsa Verde I used a basil pesto and lemon slices which were delicious!

My dinner :) 28.6.12 

Gratin Pizziola - Basically a sort of dough less pizza, a base of home made tomato pizza sauce topped with pizza like toppings. The original Recipe (which is a cook yourself thin, gizzi erskine recipe) tops it with an egg, mozzarella, artichokes and some parma ham but I used green beans, red onions, mozzarella and sausages.

My Dinner: Low Carb Cottage Pie


Basically made a Turkey bolognese sauce because I feel that’s way more interesting than mince and gravy. For the mash, I used a head of cauliflower instead of Potatoes then finished it off with grated cheese using a micro-plane grater because it makes a little cheese go a long way so you use less! It was soooo yummy! I served it with wilted spinach, pine nuts and a little bit of lemon juice. Was soooooo good!

My Dinner: Roast Veg, Bacon and Spaghetti


So like I said earlier, I used up all my left over bits and bobs for dinner tonight :)

  • I used 1leek and cut it length ways, a handfulof frozen parsnips, 1 leftover broccoli stalk cut into rough chunks,1/4 of an onion cut into chunks, drizzled a little oil on top and roasted for 30minutes at 220oC.
  • Half way through cooking I started to cook the Spaghetti (about70g), drained when finished and fried some chopped bacon.
  • When the veg was done, I roughly chopped it up and added to the Spaghetti along with the bacon and 1 tbspof fat reduced crème fraîche

Oh my it was delicious. The onion and Leek were so sweet and the saltiness from the bacon worked so well with it. Definitely making this again!

(Obviously you could leave the bacon out to make this vegetarian)
