No. 10: Mayonnaise - 24.1.12 

I was quite worried about this recipe because I know how easily it can go wrong! But so many times have I heard that you must be fearless in the kitchen! ”Anyone can cook but only the fearless can be great!” - Ratatouille. So I said to myself, go for it. I looked at a few different recipes for it but I decided to go for one from “Gizzi’s Kitchen Magic” as it used a mixture of vegetable oil and olive oil! 

2 free range egg yolks
salt and pepper
1 tsp Dijon mustard 
1/4 tsp White wine vinegar
150ml Olive Oil
150ml Vegetable Oil

This recipe states you must use a food processor, which would make it so much quicker to do. However! Every single time I have seen the recipe being made on tv they always state to ALWAYS use a wire hand whisk! I stuck to my guns and whisked this by hand!

- Whisk the egg yolks, salt, pepper, mustard and vinegar together in a large bowl. 
- In a jug, combine the 2 oils together and then very slowly add to the egg yolk mix! 1 teaspoon at a time, whisking thoroughly in between each addition until half of the oil mix has been used up. It should be quite thick by this point!
-  Pour the rest of the oil in a thin steam, continually whisking to make sure it doesn’t split. I got quite worried at this point and did it a little at a time because I reaalllyyy didn’t want it to split! When combined it will be thick and wobbly
- Season to taste with salt, pepper and a dash of vinegar.  It should keep for about a week in the fridge in a sealed container :)

I was so so proud of myself. It tasted so good!!! I thought it would go completely wrong, split and be greasy. It was smooth, creamy and you got these lovely subtle hints of the mustard and vinegar coming through. It was delicious! I had it with new potatoes, tuna and red onion for my lunch :) I don’t think anything in the world can be more satisfying than making your own mayonnaise.
