My Dinner 01.7.12 -Pesto and Lemon Mackerel with Couscous and Beans I wanted to try out some of the skills I had learnt at River Cottage, one of them was to de-done a fillet of Mackerel. I was at Castlepoint today picking up some prints and decided to go to Sainsburys to look for something for dinner. I was going to buy a chicken and have it over a few days but I saw a sign for the fish mongers and decided to have a look! And there it was! The last mackerel fillet! So I bought it, took it home and cooked it but instead of a Salsa Verde I used a basil pesto and lemon slices which were delicious!
