Last thing we made - Starter: Mackerel Stuffed with Salsa Verde
So first we made the Salsa Verde! Finely chopped the garlic and added salt to smooth into a paste. I then finely chopped the herbs and added mustard and a bit of Olive Oil and chopped together.
Then onto the Fish! We learnt to take out the spine, ribs, fillet and debone the fish. I then spread the Salsa Verde into the grooves of the fish which I removed the bones. I used string to tie the fillets together and then pan fried it and served it with some slices of my bread and a little salad.
A perfectly light starter!
