I love having soup for lunch at uni but today was Carrot and Coriander. Match made in hell. Christmas Eve
First thing’s first. I’m sorry I’ve been inactive! What with all my uni work, then Christmas shopping, getting ready to come up to Cardiff to be with the fam, spending a week with my boyfriend Ryan here, it’s already Christmas eve and this month seems to have flown by. Just had dinner. I had baked duck eggs in a tomato sauce made with tinned tomatoes, red onion, garlic and leek. I placed the sauce in a baking dish, topped with sliced tomatoes, sweetcorn, left over chopped up cooked pork I marinated in bbq sauce for a little bit and crumbled over some caramelised onion cheddar. To finish it off I cracked a duck egg into the middle and baked for 20-30 minutes :) ...
